One way to support healthy eyesight is to eat foods rich in phytochemicals called carotenoids. Some of the best sources of these are raw spinach, yellow corn (non-GMO), carrots, as well as goji berries. Also important are orange bell peppers, avocado, egg yolks, kale, blueberries, and bilberries. Zeaxanthin and lutein are two carotenoids that accumulate in the retina and macula, and support their vitality. Those that eat a diet high in these phytochemicals have less risk of macular degeneration and other eye diseases.
Orange peppers have almost 3 times more zeaxanthin than any other food. Egg yolks, kale, and spinach contain the highest amount of lutein. A medium sized avocado has 400mcg of lutein so rich in fat, it helps all our nutrients to be absorbed more readily. Last, remember your blueberries and bilberries! They help improve night vision, adjustment from light to dark, and recovery from glare.
